Not Your Ordinary Bacon Wrapped Chicken

Bacon wrapped chicken. Sounds plain, but this was the exact opposite. The chicken is coated in chive cream cheese then wrapped fully with bacon and topped with fresh tarragon. As it cooks, the cream cheese absorbs into the chicken. It becomes creamy and succulent. The flavor of the chive and the fat from not only the cream cheese but the bacon, tenderizes the meat. The bacon on top tastes like it was grilled and falls apart as you cut it. Eating the bacon on the bottom is a completely different experience. It takes like the chicken and becomes soft but not chewy. The aroma coming off the plate is heavenly. You can smell the bacon but it’s being penetrated by the strong chive smell with a hint of tarragon in the background. Taking the first bite, I peeled off the bacon to try just the chicken. It was so rich, moist, and tender. I felt like I was biting into a Gusher, juices pouring out with a new flavor experience. The second bite, with the bacon this time, I completely underestimated the flavor. My taste buds went crazy. The saltiness from the bacon complimented the cream cheese. The tarragon added enough of an earthy tone that it mellowed the flavors out and the bitterness of chive when I bit into one added the perfect tang to the entire dish. I expected something filling for my stomach and instead got my taste buds filled with flavors as well!

  1. Bacon wrapped anything to me sounds pretty plain. You did a really good job with your descriptions. There was strong imagery and I can just smell the bacon reading this blog. I love bacon, and cream cheese, so this made my mouth water. Kudos! :)
