Have you ever tried a dish for the first time and its the most delicious thing you've ever tasted? so much so that it doesn't stop your heart but starts it. The only dish that has ever given me that sensation is the Steak Tartare from "The Farmhouse" restaurant in Burlington VT. The first time I dined there I ordered the steak tartare to start and once it was placed in front of me I was immediately mesmerized. I looked down and my plate and studied every aspect of it, from the bright red color of the tender steak, to the small pieces of capers, red onion, and minced chives. I took a small piece of toasted bread from my plate, spooned some tartare on top and placed it in my mouth. I instantly taste mustard and capers bursting in my mouth. Then a little spice from the mustard and black pepper. The steak was completely tender and cut to the right size. The crunch from the red onion and tartness from the capers rounded out everything perfectly like the cherry on top. washing it all down with home brewed iced tea, I was in heaven.
